Ingredients
- ½ cup raw peanuts
- ½ cucumber, peeled and cut into cubes
- ½ carrot, grated
- ¼ capsicum, chopped
- ¼ teaspoon black pepper powder
- ½ teaspoon chaat masala
- 1-2 tablespoon lemon juice
- salt to taste
- Chopped coriander to garnish
You can also temper this with urad, mustard and asafoetida.
- Soak peanuts for 15-20 minutes in a bowl of water with a pinch of salt.
- Strain and steam cook the peanuts on high flame for 3 whistles. Then reduce the flame and cook for another 5-8 minutes.
- Remove from flame and let the pressure release completely.
- In a wide bowl, combine grated carrots, cucumber, capsicum, and boiled peanuts and mix well.
- Add black pepper powder, chaat masala, lemon juice and salt. Toss well and temper with urad, mustard and hing.
- Enjoy this healthy and crunchy salad.
