9. Recipe - Boiled Peanut Salad

Peanuts whether in the form of sweet Chikki or yummy masala peanuts or just peanut salad is packed with nutrients. They can be a healthy snack during pregnancy. 

Ingredients

  • ½ cup raw peanuts
  • ½ cucumber, peeled and cut into cubes
  • ½ carrot, grated
  • ¼ capsicum, chopped
  • ¼ teaspoon black pepper powder
  • ½ teaspoon chaat masala
  • 1-2 tablespoon lemon juice
  • salt to taste
  • Chopped coriander to garnish

 

You can also temper this with urad, mustard and asafoetida.

 

  1. Soak peanuts for 15-20 minutes in a bowl of water with a pinch of salt.
  2. Strain and steam cook the peanuts on high flame for 3 whistles. Then reduce the flame and cook for another 5-8 minutes.
  3. Remove from flame and let the pressure release completely.
  4. In a wide bowl, combine grated carrots, cucumber, capsicum, and boiled peanuts and mix well.
  5. Add black pepper powder, chaat masala, lemon juice and salt. Toss well and temper with urad, mustard and hing.
  6. Enjoy this healthy and crunchy salad.
